The Specialty Coffee Association of America has declared the new Santos The Best Brewing Equipment of the Year. The new Santos now comes in a smaller size for 6 cups of the most aromatic wake-up call youve ever had. It doesnt take up much space on your kitchen counter and was developed to make your coffee on the go. It works all by itself: The water in the pot heats up by an electric-powered, thick-filmed, stainless heating element, and the evaporating steam generates the pressure for the water to rise to the funnel and through the funnel tube, where it meets the ground coffee beans. After four minutes of brewing away in the ideal temperature of 201Ý, the heating element switches off and the vacuum in the jug sucks the liquid coffee down through the filter.

Coffee Vacuums work off of air displacement, forcing the water from the lower bulb to the upper bulb, where the water gets mixed with the coffee grounds, steeps a bit, then, when removed from heat, gets drawn back down through the filter into the lower bulb. The entire process is fascinating to watch, and provides an excellent cup of brew. The brewed coffee in a vacuum is never directly exposed to heat.
