All of the Zassenhaus Mills have the same functionality as the next, fully adjustable grind, from coarse to Turkish fine grind. They work similarly to that of a pepper mill. Just rotate the thumb screw to get the grind you need. The thumb screw can be screwed down so that the top and bottom conical burrs mesh together for a fine Turkish grind coffee if desired. The burrs are machined from high carbon steel, and hardened for years of service. Zassenhaus mills do indeed demonstrate the high quality of German craftsmanship.
